Easy Healthy Recipe Something Like Gumbo - But Better!
I love the name of this one pot meal; very descriptive. Coming from a reader in New Mexico, it makes me wonder if Jo Ann has re-located from Louisiana. I haven't tested this easy healthy recipe yet, but it sounds delicious! If you don't eat pork, you can easily substitute turkey bacon, and of course I'd suggest you make sure to buy bouillon with no MSG. Ingredients you'll need: 1/2 cup butter 1/4 cup flour 4 slices bacon cut in 1/8 inch pieces 1 pound boneless,skinless, chicken breast 6 medium okra sliced in small slices 1 large onion chopped 4 cloves garlic, chopped fine 3 ribs celery chopped in thin slices 1 cup chopped parsley 1 large glass of water with 6 chicken bouillon cubes 2 quarts canned tomatoes 4 bay leaves 1/4 cup dried oregano Gumbo File for garnish (Sassafrass) Directions: Melt butter in electric fry pan, add 1/4 cup flour. On medium heat, stirring constantly, making a roux; add bacon, stirring constantly until slightly thickened; add chicken doing the same; add onion and garlic cloves; (add bouillon cube water a little at a time when it gets too thick) add celery, okra, & parsley, stirring constantly; then add canned tomatoes, bay leaves, and oregano. Simmer for 30 minutes and serve over rice with file gumbo seasoning on top. This easy healthy recipe was submitted by Jo Ann Anderson Dexter, New Mexico, USA I bet this is even better the next day.
